Guacamole for everyone! Avocados have so many health benefits, I make a meal out of it. Guacamole is typically made with tomato, onion, cilantro, jalapeno, lime. If you don’t like any of those ingredients, try substituting carrots, cucumber, celery, squash, peppers, apple, beet… almost anything. Now that’s what I call a guacamole salad.
Sometimes called the alphabet fruit because just one avocado provides your body with vitamins A, C, E, K and B6 so you can be sure you’re getting plenty of body nourishments with each bite. Other vitamins found in relatively large quantities in an avocado include riboflavin, niacin, folate and pantothenic acid.

Howdy y’all! Here’s a video of myself making a juice recently. This yummy superhero drink consists of tomatoes, orange, apple, lime, cucumber, carrots, and swiss chard. Oh yeah!

So, I love peanut butter and banana sandwiches, but one day I didn’t have any bananas. What to do?

Yep. Peanut butter and strawberry sandwich ftw! It was good too. Of course, strawberries can be a bit tart depending on the time of year, but they’re usually sweet.
Speaking of peanut butter. Don’t buy PB with hydrogenated oils! It’s no bueno for you. Only buy the natural PB that separates with no added sugar. Also, did you know that peanuts aren’t even nuts?
Interesting that we call it peanut butter, though, since peanuts aren’t nuts at all – they’re actually beans (so are soy ‘nuts’). The “nuts” of the peanut plant develop in the shell underground – which explains why they’re sometimes called “groundnuts” or “earthnuts”. And while peanut is certainly the most popular of the nut butters, there are some other alternatives – butters made from almonds, walnuts, pistachios, soy or cashews – that offer up a real change of taste. – Post on discovergoodnutrition.com

Here’s a de-lite-ful meal I put together when I had some Cool Whip left over from a potluck. I never buy Cool Whip, but since I had it I figured I’d use it! No waste.

Simple Ingredients:

I cut the banana and strawberries into nice little bite size pieces and put them into the bowl with the blueberries. That completes the fruity first layer.

Then I added the trail mix which contains almonds, peanuts, seeds, dried cranberries, and other goodies I can’t recall.

Then the final touch. A nice layer of Cool Whip with some ground flaxseed sprinkled over it. Voila! A healthy*, fruity, nutty, creamy, yummy meal.
*Yogurt would be an ideal substitute for the Cool Whip. Try it and ENJOY a super healthy meal!

Today I decided to throw a tomato in the juicer. I do not drink plain tomato juice because I don’t care for how it tastes solo, but I do like to combine it with my favorite flavors.

I finally have my very own Omega Masticating Juicer, one of the most necessary tools for a healthy diet. This juicer makes it possible to do more than I know, but I will use it primarily for fruit and vegetable juices. The Omega juicer doesn’t come cheap ($300+), but it’s worth the cost if you commit to juicing often. I am very fortunate to have received mine as a gift (it was on my Xmas list!).
