In July of 2008 I decided to experiment with a vegetarian diet. I had no idea what I was doing. My usual diet consisted of chili dogs, chicken tenders, barbecue, pepperoni pizza, hot wings, spaghetti bolognese, chicken enchiladas, anything with bacon, etc.

After a month of meatless meals, I felt healthy and energetic. I didn’t crave meats, and no longer experienced that “too full” feeling after meals. I read a few pro-vego articles and I was convinced. I converted without hesitation. I recognized that my eating habits were naturally healthier when I excluded meat.
Quinoa and Veggie Stuffed Peppers
The transition from carnivorous to vegetarian life provided new challenges in the kitchen (and grocery). I began with simple frozen veggies and pasta meals, which were lacking in freshness and nutrition. Through my journey into the unknown I have discovered new flavors and foods. Fortunately, my recipes and techniques have improved dramatically, and I continue to develop a variety of wholesome vegetarian meals.
